Asian Noodle Salad

This is full of taste and the sweetness of the carrots make them an excellent noodle for younger kids.  You can use 1 pound of various vegetables for noodles.  Use a vegetable peeler for long thin noodles or use your food processor to grate:

Carrot

Bell pepper

Sprouts

Sliced lettuce

Sliced mushrooms

 

Puree sauce together:

zest of 1/2 lemon

4 cloves garlic

1 tbspoon almond butter

2 inches ginger

2 tbsp blue agave raw syrup

2 tbsp apple cider vinegar

3 tbsp nama shoyu

3 tbsp flax oil

 

Mix with veggie noodles.
